Crispy chipotle chicken wings with apple slaw

Ingredients

  • 1kg Coles RSPCA Approved Chicken Wing Nibbles or Coles RSPCA Approved Chicken Wings
  • 1/2 cup (75g) plain flour
  • 400g pkt Coles Kitchen American BBQ Salad Kit
  • 1 green apple, cut into thin matchsticks
  • 1 lemon

Method

  1. Preheat oven to 220°C. Place a lightly greased wire rack on a large baking tray lined with baking paper. Season the chicken and place in a large bowl. Add the flour and toss to coat. Place chicken on the wire rack and spray with olive oil spray. Bake for 25 min or until golden and cooked through.
  2. Meanwhile, juice half the lemon. Cut the remaining lemon half into wedges. Place the slaw from the salad kit in a large bowl, reserving the dressing. Add the apple and lemon juice and toss to combine.
  3. Place the chicken in a serving bowl. Serve with the apple slaw, reserved dressing and lemon wedges.
