Frank’s gone back to his culinary roots to help health-conscious and time-poor Aussies eat well and improve their performance with his new cookbook, Eat with Purpose.

Frank will be cooking breakfast tacos and banana bread.

Recipe below:

BREAKFAST TACOS

Serves 2

PROTEIN:

2 rashers bacon

3 free range eggs

VEG:

½ can cooked black beans (125g)

½ red onion

½ tbsp olive oil

1 tbsp butter

GUACAMOLE:

½ avocado

½ lime

½ tbsp olive oil

Small handful coriander leaves

SERVE WITH:

6 small tortillas

Your favourite chilli sauce

Book bacon: Slice bacon into small matchstick sized strips. Add to a pan on a medium heat cook until golden brown (approx. 3 – 4 mins)

Cook onion: Finely slice red onion and add into pan for a further 3 minutes.

Cook beans: Reduce pan head. Add in drained black beans cooking until tender (approx. 4 minutes)

Make guac: Finely chop coriander (leaving some leaves for garnish). Mash avocado with a fork, season with salt, juice of lime, and mix.

Cook eggs: Crack the eggs into a bowl and whisk generously. Heat up a small non-stick pan. Add butter then eggs and salt, stirring occasionally until the eggs are cooked (approx. 2-3 mins)

Serve: Head tortillas then add guac to base, followed by bacon, beans and generous spoon of eggs.

BANANA BREAD

Serves 4-6

Cooking time 1 hour

THE MIX:

5 ripe bananas

120g butter (room temp)

150g brown or raw sugar

2 free range eggs

100g walnuts

1 ½ cups plain flour

1 tsp bicarb soda

1 tsp cinnamon

½ tsp salt

SERVE WITH:

Fresh ricotta, honey and butter

Preheat oven: Set oven to 170 degrees Celsius

Mix wet ingredients: In a bowl, cream butter and sugar together. In a separate bowl, mash 4 bananas. Add butter and sugar mixture, then eggs and mix.

Add dry ingredients: Once combined, fold in plain flour, cinnamon, and bicarb soda.

Prepare pan: Line a baking tin with butter and baking paper.

Assemble: Pour mix into tin. Slice remaining banana length-ways and arrange on top.

Bake: Cook for approx. 50-55 mins. To test if banana bread is ready, top springs back when touched and skewer comes out clean when inserted into centre.

Serve: Slive and serve with fresh ricotta, honey and butter if desired.
