Golden Zespri™ SunGold™ Kiwifruit pops

Preparation time: 5 mins plus chilling

Makes approximately: 8

INGREDIENTS

● 2 Zespri™ SunGold™ Kiwifruit, ends removed

● ¼ cup smooth peanut butter

● Shredded coconut to decorate

Method

1. Cut Zespri™ SunGold™ Kiwifruit into 1.5 cm thick rounds.

2. Insert a craft stick firmly into each slice. Use a piece of paper towel to pat the slices

dry. (this will help the peanut butter stick)

3. Warm peanut butter in the microwave for about 10 seconds or until a dippable

consistency.

4. Dip Zespri™ SunGold™ Kiwifruit rounds into peanut butter until they are partially

coated. Transfer to a plate lined with a sheet of baking paper.

5. Sprinkle peanut butter with coconut.

6. Freeze pops for 15 minutes for a chilled treat, or freeze for an hour or overnight for a

frozen treat.

Zespri™ SunGold™ Kiwifruit FroYo cups

Preparation time: 15 mins plus 2 hours freezing time

Cooking time: NIL

Makes approximately: 24

INGREDIENTS

● ¼ cup honey, warmed

● 1 cup granola or toasted muesli

● ½ cup rolled oats

● 2 Tbsp sultanas

● 3 Zespri™ SunGold™ Kiwifruit

● 2 cups vanilla flavoured Greek-style yoghurt

METHOD

1. Line holes of a 12-hole 1/3 cup capacity muffin pan with paper cases.

2. Heat honey in a microwave-safe bowl for 15 seconds or until runny and warm.

3. Put granola, oats, and sultanas into a large bowl, pour honey, and stir to combine.

4. Spoon evenly into muffin holes, pressing into the base.

5. Peel and mash two Zespri™ SunGold™ Kiwifruit in a large bowl, add yogurt and stir

to combine. Spoon mixture evenly into muffin holes.

6. Slice the remaining Zespri™ SunGold™ Kiwifruit into 12 thin slices, then place on top

of the yogurt mixture. Freeze for 2 hours or overnight.

7. Turn the muffin tray upside down and pop out each cup. Set aside for 1 minute

before to slightly thaw before removing paper cases. Serve.

Storage suggestion: Once frozen, you can remove the cups from the tray, leave them in

the paper cases, transfer them to an air-tight container, and store them in the freezer.

Zespri™ SunGold™ Kiwifruit Guacamole

Ingredients:

3 Zespri SunGold Kiwifruit, peeled and diced

2 large Avocado, ripe

1/4 red onion, finely chopped

1/4 bunch coriander, finely chopped

1/2 lemon or lime, juiced

Salt and pepper

Opt: Jalapeno peppers or chilli of choice

Method

Add chopped the avocado, Zespri SunGold Kiwifruit and red onion to a bowl and mix.

Add coriander, lemon and season with salt and pepper and lightly mix.

Serve with veggie sticks
